Sturgeon

Sturgeon is the common name for 25 species of fish in the family Acipenseridae. In Canada White sturgeon (Acipenser transmontanus), Atlantic Sturgeon (Acipenser oxyrhynchus) and Short nose sturgeon (Acipenser brevirostrum) are farmed for their eggs (roe). The roe is made into caviar and is a luxury product which makes the sturgeon pound for pound the most valuable farmed fish.

The White sturgeon is the largest freshwater fish of North America and can grow up to 20 feet and 1,799 pounds.
